
Samke Harra is an extremely popular dish prepared in restaurants and homes throughout the Middle East.We have teamed up with famous Chef Emad Zalloum of Sambusek Restaurant at the Rosewood Hotel Abu Dhabi to find out how he brings out tremendous flavor to this recipe while keeping it healthy.
White fish is low in fat and is a great source of protein and essential nutrients to refuel after the fast. In addition the vegetables, herbs and spices used here will make sure that you and your family will love the flavor.
Ingredients:
(Serves 1)
Harra Sauce
- 1 onion
- 2 pieces of garlic
- chopped coriander leaves
- chopped parsley leaves
- 1 carrot
- 1 of each - red, green and yellow capsicum
- 1 chopped tomato
- 2 tsp of tomato paste
- 1 tsp of chilli paste
- 1 tsp of cumin powder
- 1 tsp of coriander powder
- ½ tsp of white pepper
- 1 small cup of water
Fish Preparation
- 200 gm of White Fish Fillet such as Mediterranean Sea Bass or other sustainably sourced fish
- 1 tsp of garlic paste
- Extra virgin olive oil
- 1 small cup of lemon juice
- 1 tsp of coriander powder
- 1 tsp of cumin powder
- ½ tsp of white pepper
- Zaatar leaves or thyme leaves as an alternative
